I don't know about you, but when it's hot outside the last thing I want to do is turn on my oven! So as the temperatures warm-up, I stay on the lookout for easy to prepare meals that can be eaten cold or at room temperature. 

In addition to hitting those points, salads like this one are also a great way to encourage kids to try new foods. Why? Because it's flexible enough to be deconstructed or specialized:  kids can simply taste the components they are unfamiliar with and still have a fulfilling meal that packs a nutritional punch:

  • Feta cheese is lower in calories and fat than most, but high in Calcium keeping bones strong, and help preventing osteoporosis.
  • Cucumber is full of Vitamin A, B, and C which boost immunity PLUS it's 96% water, keeping you hydrated
  • Quinoa is protein rich, contains all 9 essential amino acids, and is high in magnesium and iron
  • Apple Cider Vinegar has been known to lower blood sugar, cholesterol, and lower risk of heart disease

Letting your kiddos help with prep might also increase their chances of giving these foods a try. Let them crumble the feta (or put the crumbles into the bowl), have them measure the quinoa, or let them help you chop the cucumbers (these are great beginner knives for little chefs). Measuring and shaking salad dressing (if you make it in a sealed container) is also a hit in our house!
